Kinshishi (private-room Agu shabu-shabu)

A shabu-shabu restaurant in Matsuyama, Naha, where every table is in a private room: a horigotatsu room, a raised-tatami room and a zashiki room, the largest seating 16. Kin Agu pork, raised on a fermented feed developed by the house, is dipped in a bonito broth with island vegetables. One room has walls of Okinawan earth (red clay, coral, lime), and the tableware includes Ryukyu glass from Seiichi Sueyoshi's Ginga series.

Corporate use

The dinner of a leadership committee or small VIP group wanting to taste Agu in quiet: every table is in a closed room, with up to 16 in the largest. The restaurant works by reservation only (by 5 pm the day before) and with set courses; it offers no all-you-can-drink plans, which we factor into the budget. All rooms are tatami: no wheelchair access, but a horigotatsu room spares guests from sitting cross-legged.

Private rooms & private hire

Private rooms only: a horigotatsu room, a raised-tatami room and a zashiki room; the largest takes up to 16.

The menu

Three shabu-shabu courses: Kin Agu only (three starters, island vegetables, Agu meatballs, 150 g of belly and loin, Okinawa soba noodles or zōsui, dessert), Kin Agu with A5 Ishigaki beef sirloin, or A5 Ishigaki beef (round and sirloin) with rafute. Extras include rare island greens (handama, Miyako fern) and Okinawan dishes such as brown-sugar jīmāmi tofu. Allergies handled with a call ahead.
